In the CPE profile, I can see some text that begins with a dollar ($) sign. Why is it there?

These are variables. They will be substituted with real values when the profile is generated. For example, $id will be replaced with the ID of the account. Here is the list of available variables:

$id - Account ID
$h323_password - Service password
$firstname - First name set on the Account (Account Info -> Subscriber tab)
$midinit - Middle name set on the Account (Account Info -> Subscriber tab)
$lastname - Last name set on the Account (Account Info -> Subscriber tab)
$ext - Extension assigned to the Account
$ext_name - Extension name
$sip_ip - IP address ofthe SIP server
$web_ip - IP address of the web server
$mac - MAC address of the device
$ascii_key - Key which is used to encrypt the configuration information (should be equal to corresponding key in IP inventory entity);
$i_customer - i_customer of the customer the account belongs to
